Sweet Corn Pasta
1 pound angel hair pasta
2 cups cooked sweet corn kernels
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat leaf parsley
1/4 cup olive oil
2 Tablespoons fresh lemon juice
2 crushed garlic cloves
1 Tablespoon lemon zest
Parmesan cheese for serving
- In a large bowl, combine the olive oil, lemon juice, lemon zest, basil and parsley.
- Add the sweet corn kernels.
- Toss to combine and season with salt and pepper. Meanwhile, cook the angel hair according to the package directions. Toss the pasta with the corn mixture.
- Garnish with Parmesan.
